White Chocolate Cookies

White Chocolate Cookies (gluten & dairy free)

½ cup of rice flour, ½ cup of tritamyl flour
¼ cup soya butter, melted
½ cup of brown sugar, ¼ cup of white caster sugar
1 egg, 1 egg yolk
150g roughly chopped dairy-free white chocolate
100g grated dairy-free white chocolate
1 tsp vanilla
¼ tsp baking soda
1 tbsp xanthan gum

Heat oven at 170 celcius. Get two bowls - in one, mix together the flours and xanthan gum, and baking soda. In the other, cream together the melted soya butter and both the sugars. Pour in the egg and vanilla, and beat for 2-3 minutes until the mixture is more pale and quite creamy.

Stir all the ingredients together until just mixed, and then fold in the grates and chopped dairy-free white chocolate. Use about ¼ of a cup of batter for each cookie, and flatten slightly with a spoon, or the tips of your (clean!) and damp fingers. Bake for 15 minutes or so, until the edges are just browned, and the centre is still looking soft. Let cool completely and enjoy some of the most delicious cookies ever - that is, if you are as much of a fan of chewy, crispy, white chocolate flavoured baked goods as I am.
