Diamante | Oat Cookies & Muffins

I like to change things, but my personality and style often change too fast for me. One negative aspect of this is that every half a year or so, I am left with a closet of clothes I will never wear, as I have out-grown them in some sense. My goal for this year then - as I will be turning twenty in a few short months, a prospect I am greatly looking forward to - is to form a closet of perfect basics that I will not and can not get tired of. I mentioned on my Formspring that I would be having a sale, and promised to a few questioners that I would coincide its release with a blog post. I have remained true to my word to some extent - I've listed a few of my items on eBay, just shoes at this point. I'm tahtisyrjala on there. I'll be periodically attempting to list more throughout the day - eBay is a total nightmare, logs me out every three seconds, and I've lost potential listings about three times over. (I've currently been trying for over an hour and have succeeded in listing a grand total of two items. Insert rage shaking fists and eye rolls.)

I wore these tights on a sunny day, and while out for a walk I had three random people comment on them - I'm assuming because the diamanté goes proper sparkly when the sun hits it, it's fun to look at, haha! Shirt, skirt and tights are from Topshop, shoes are from River Island, belt is vintage. You can find this look on LB HERE.





We had an enormous bag of oats in our cupboard that nobody was using, so I decided to make some goodies for Maeve. A note with a lot of the recipes I post - I use salted butter instead of the more common unsalted, so if you're using the latter, you might want to add in a pinch to a quarter teaspoon of salt, depending on how sweet the recipe is. (I don't have any particular reason for using it, just personal taste preference, and handiness - we usually only have salted butter.)

OAT MUFFINS
  • 1 cup flour
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon, nutmeg, allspice
  • 1 tsp grated orange zest
  • 1/2 tsp grated lemon sezt
  • 1 large egg
  • 1 tsp vanilla
  • 1/4 cup honey
  • 1 tbsp canola oil
  • 1 1/4 cup milk
  • 1/2 cup raisins
Preheat your oven to 200 C, and line (or grease and flour) a 12 cup muffin tin.
Stir flour, oats, sugar, baking powder and soda, spices, orange and lemon zest together in a large bowl. In another bowl, mix together the egg, honey, vanilla, oil and milk until well combined. Add the wet ingredients to the dry, and stir until just combined and moistened. Over-mixing will not make tasty muffins. Gently fold in the raisins.
Ladle or spoon the batter into cups. Bake for about 15-20 minutes - take out midway when set slightly, and sprinkle some sugar on the tops. They're done when a tester comes out clean.



OAT COOKIES
  • 1 cup ground almonds or finely chopped & toasted pecans
  • 3/4 cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup flour
  • 1/2 tsp baking powder, 1 tsp mixed cinnamon, nutmeg & allspice
  • 3 cups oats
  • 1 cup dried cranberries and raisins
Preheat your oven to 175 C. Beat the butter and sugar together until creamy, add egg and vanilla, and combine well. In another bowl, mix flour, baking soda, and spices. Add the flour mixture to the creamed mixture, and beat until smooth. Stir in nuts, oats, and dried cranberries.
Use about a 1/4 cup batter for each cookie. Spread 2" apart, wet hand and flatten the cookie to about 1/2" thick. Bake for 12-15 minutes, until light golden brown, and still slightly soft in the centre.
