I like days that are double-numbers of the month and the date. I'm going to miss the dates that are a triple whammy one it's 2013. Maeve and I are all alone this week at home, and instead of falling into squalor as is expected of teenagers, we've spent most of the time cleaning and re-organizing the house - slightly ironic. I made this up speedily yesterday for Maeve’s dinner. The fridge is getting bare and I have no idea or care what to buy, as of now. Will peruse cook books in attempt to find (inexpensive) inspiration.

Mushroom & Quorn Mince Stuffed Peppers
  • 3 different coloured peppers
  • 150g Quorn mince
  • 100g grated cheddar
  • Butter
  • Sage, salt & pepper
Defrost the Quorn. While it is doing so, slice the mushrooms lengthways and crossways into even 1cm cubes. Melt some butter in a pan (enough to coat it evenly) and cook the Quorn and mushrooms in it (they seemed to cook at around the same time when I was frying them, oddly.) Add the cheese and seasoning, and about a tablespoon of sage. When the mix is cooked, slice the tops off the peppers, take out the seeds and the white flesh, and remove the stem. Spoon the mixture into the peppers and place the top back on. Grill for five minutes, or until the pepper is slightly tender, but still crunchy.
Alongside these, I made some crispy rice cakes - I boiled 1.5 cups of brown rice, and spread it into a non-stick pan, pressing down until it was firmly packed. I melted a little bit of butter and poured it over, then put them in the oven at 220 celcius until they were, well, not soft - crispy.
